Went into the fermenter on the 2nd of April.
4kg pale ale
Mashed at 70C
300ml of honey and .29kg of minced fresh ginger and half bottle of hop extract at 6 minutes
New fermenter and fresh yeast
Started fermenting in less that two hours
Still going strong on the 5th! Scary!
Ginger still had lots of aromatics after straining. Next time, more ginger, I think.
There may be too much alcohol. If I can get back to the campo, I may try pasturizing the bottles. Otherwise, this will be a cold weather sipper.
